So, to most peeps that aren't splitting hairs, that "beef" ribeye came from a cow.

When I worked at Swift they really talked down "cow beef" as being
substandard. They were just meat cutters tho, what the hell do they
know.
The tip off was yellow fat that had a different taste to it.
Maybe if they hold them on a feed lot for a while after they stop
lactation that may go away.

I'd guess that there's a big difference in meat 'quality' between an older milk cow no longer
producing and a much younger steer or heifer.
