Wet rub: To 3/4 cup of worcester sauce add a 1/4 cup of vinegar and 1/8 tablespoon of brown sugar, garlic powder, vinegar, ground pepper, garlic powder, salt, and paprika. Rub the ribs and let sit for at least 8 hours. It is best that you wrap the ribs tightly in plastic wrap during this seasoning process. Next day....Unwrap the ribs and put them in a large pot. Add 2 cans of beer to the pot. Place ribs (cut in halfs) on racks so as none arre touching each other or the beer. Cover and cook @ 350~325 F 1~2 hours with the lid on. Remove when the meat pulls away from the bone by 1~1/1/4". Place the ribs on a preheated grill (high). My latest trick is to bake the ribs for about 4 hours at 225 degrees, then pop 'em on the grill for about 10 minutes a side. I get my ribs at Costco. Here ya go: Beef Brisket or Pork Ribs Rub ¼ cup chili powder (Chipotle for me!) ¼ cup salt ¼ cup granulated garlic ¼ cup granulated onion ¼ cup black pepper ¼ cup sugar 2 tablespoons dry mustard 2 bay leaves Combine ingredients in a blender until evenly distributed. Season ribs or brisket on both sides with rub seasoning. Sprinkle the seasoning on the meat and rub in well with your hands.
