I have two West Marine single seat inflatables. They are convenient
but don't track very well. I tried putting skegs on them to improve
performance but still am working on this. They are inexpensive, and
easy to use - get a high output foot pump. They are also pretty fun as
long as you aren't looking for serious performance. I think they'd be
good for use with boat-in camping on lakes, too.
