Do I want to use something like plastic wood or do I want to use epoxy
to fill the holes? Which would you choose and why? The filler material
will not show once the speakers are re-attached tot he stands.

Use pieces of dowel, drill the holes out the size of the dowel, being
careful not to enlarge the hole. Rough up the dowel a little with
sandpaper, this will allow the glue to seep into the dowel some, and
swell it up in the hole. Use two part waterproof wood glue, apply
liberally to the dowel, then tap into the hole, not to worry, it can
be cut flush when dry. Then, redrill.
