Drove a BIG F150 last night... hated it. I mean, it has everything I
need but I just don't like driving that huge monstrosity... Think I
would get over it soon enough?

Have your wife decide what you want to have for a family trailer first.
Then you decide which 250 or 350 setup is the appropriate haul vehicle.
How about a combo horse trailer/camper?

For now, the big trailer is still a pipe dream, at least a year or two
down the road so I am thinking a vehicle for now, our trailer (loaded to
the gills) is 3000 pounds bikes and all... The Dakota gets one mile less
per gallon than the jeep and it has the 4.7 v8 so probably better
mileage than the jeep with the trailer we run now is my thinking.

I can suck 20-21 mpg out of the Jeep (rated 21 hwy) but as soon as I put
a trailer on, right down to 15-16.. I am thinking the Dakota might do
better than that with the trailer because of the V8..

I wouldn't get overly optimistic. The mileage you get with any tow
vehicle is affected in a big way by the air resistance of the front of
the trailer when trucking down the highway. People often don't think
about that. They aren't exactly designed to be aerodynamic.

I am not sure how much it actually helps but my trailer is a "V" nose...
With the Jeep it may be insignificant because of the height of the Jeep
itself, especially since it has a big aftermarket roof rack too...

The V might help some with a Pickup truck, but then again it may not at
all... but you are correct, there is just a lot of drag with any trailer.

My V8 4Runner got between 8-10, depending on the headwind or tailwind. I was pulling about 3800lbs.

I usually get about 11-12 mpg pulling a 4500 lb. boat with a 5.3L and
4.10 rear end. Lots of hills... We could probably graph gross weight
vs mpg with various vehicles and get a fairly continuous curve.

I get 13.5-16 towing my boat, about 4400#. Lots of hills, some mountains.
But my tow vehicle is a 2004 Duramax LLY diesel.
