Default Carolina Skiff Configuration

This boat is said to be highly configurable.
I'm thinking about getting a Model 1980 DLX, but I might go smaller if
it makes sense.
The boat will used in Charlotte harbor and backwaters, primarily to
fish.
Anybody have experience or recommendations?
Console size, placement.
Front deck options.
Rear deck options.
Live well options, placement.
Gas tank options, placement.
Bimini versus T-Top
Other useful options I'm unaware of.
One of my concerns is trim. For example, the max rating for the 1980
hull is 115hp. A Yamaha 115 4-S weighs 466. The 90 4-S weighs 369.
How does the extra 100lbs effect stern squat when different combos
of live wells/gas tank are also stern placed?
Since I've read of instances of fast air getting under and flipping
these boats, trimming is a big concern, and initial configuration is
important.
That's the kind of info I need, but any experiences/recommendations
with the CS are appreciated, and I can use them.
I won't get to a dealer in Florida for a few months, but want to be
prepared and know what I'm looking at. I'm hoping to get some
on-water time with the skiffs even if I have to charter one, but don't
know how that will pan out. Besides, it won't substitute for real
owner experience.
