Are there any watches where you can freeze the time (the actual time, not
the time on a stopwatch) until you've had a chance to to log it and
calculate your position - and then un-pause the time so the watch returns to
the now current time?

Yes, it's called a memory. If you are competent enough to sail/boat, use
logs, and calculate your position, you ought to be able to remember a time
count on a watch for a few minutes while you calculate. If not, just write
down the time first before you begin calculating your position.

I fail to see the need for a watch that you can pause.

I do not know of a watch that does that, but you could soon write a small
program for a pocket computer that did just that.

I wrote a program for Astro Navigation that included just that function,
years ago.
It ran on the old Psion Organiser II pocket computer, which you can pick a
working model of up for 5 pounds or less.

I don't know about Psions, but most hand held computers don't have
sufficiently accurate clocks for navigation purposes. My Sony Clie
(PalmOS) is only good to a few minutes.

The usual technique is to start the stopwatch at some known time prior to
taking the sight (say, on the hour), then stop it at the time of the sight.

Most navigational watches include the features you need, but at a price.

For Christmas, from Santa, I received a Casio G-shock model #2608 watch
that has a "Time Recorder" feature that allows me to record and store,
at the touch of one of the buttons, up to 30 records of the current time
(month, day, hour, minute, second). It is solar-rechargeble, displays
world time, also has the usual stopwatch and alarm, but the really
outstanding feature is that every day in the early AM it receives a
signal from the cesium atomic clock in Fort Collins, CO to synchronize
the time. You have to be within 2000 miles of Fort Collins for this
feature to work.

you can achieve the same effect with a stopwatch - start it at a known
time - stop it when you take your sight and do the math to work out
the time you stopped it.
