Default East Coast, Montauk guys - need bait advice

Thinking about a charter out of Montauk.
I'm wondering what is the best bait for these monsters.
I'm guessing cut bigfoot or maybe live karker.
Recommendations?

I'd try fruit, nuts, fish, maybe some clams. Oh, get some dogs to get
'em up a tree. Then you can plink 'em with your .22.
