know this:

Aeolus is the Regent of the Winds in Greek mythology (ok, for the
picky, there are three Aeolus in Greek mythology - we're discussing
the one associated with Odysseus).

Boreas (North Wind), Eurus(East Wind), Notus (South Wind), and Zephyr
(West Wind).

Pretty cool huh?

You live in the holy land of seafood and you've never had aioli???? It's
just two hops away from remoulade, which is the slutty cousin to great crab
cakes.

They make an interesing kind in Louisiana with horseradish - it's very

differenet and very good.



Try this one. The original recipe called for a tablespoon of salt. I cut it
down to 1/4 tablespoon and it was better that way. Don't use olive oil. It
gets funny in the refrigerator.

2 tbs wine vinegar

1/4 cup oil

1 tbs paprika

1/4 cup creole mustard

1 tbs red pepper

1/4 tbs salt

1 rib celery chopped

1 tbs parsley

1 small onion



Whisk in bowl or food processor.
