Max Speed/RPM'S For Older Boat

Hey guys hows it going? I have a 1980 silverton convertible (31')
with 363's i believe. What is the max rpms i should run them at since
the boat is older? And what is a good cruising speed? And if i do run
at these speeds, what should my engine temps be?
