Default Dory Skiff floatation locations

Since the inner topsides are basically flat for long stretches can those
panels just be covered with 3/4" thick sheets of foam glued in place? Plan
on holding the foam about three or so inches from the deck/sole. Any
drawbacks other than the ease with which those panels will be dinged?

lack of ventilation could be a problem. spray getting between the foam and
planking and not drying out. solid gunwales or side decks to keep spray
off top edge of foam?
