Default an attempt to develop a tacking analyzing system

wow, your tacks sure make nice sharp angles!

Without the relative speeds at the various angles, looking at the
pointing angle alone will not provide any useful insight. I'm sure the
boat can point higher.

What you need is a polar diagram

I bet Nick Hake has them for your boat.

Then comes the fun of learning to sail the boat to it's predicted or
potential velocity at the given angle.
