can anyone explain what a canting bow sprit is and why?
i don't understand it.

does it allow a few more degrees of tuning a spinnaker towards a reach?

No, towards a run.

The canting bowsprit allows the sprit to imitate a conventional
spinnaker pole. It swivels out to one side or the other to bring the
tack of the spinnaker out to the side.
