The bit about turning on the water after starting and before stopping is
because the cooling water exits via the exhaust system. If it is not
running there is no exhaust pressure to lift the water from the muffler to
the exhaust exit. So the exhaust system will fill up if there is water
coming in and the engine is not running. After a minute or so the water will
be high enough that it can flow back into the engine via the exhaust port.
It's only a problem when using a hose because while running the cooling
water comes from a pickup in the big jet. So when it is off no cooling
water comes in. If you ever do find yourself in that situation remove the
spark plug and crank until water stops coming out the spark plug hole. Then
get it started and run until hot immediately. The main danger with water in
the engine is not immediate. The damage comes from not getting all the
water out right away. This is true if you sink it or otherwise get water in
the engine while using it as well.
