Default Water Tank Fabricator

Not a problem as long as the tank walls are thick enough to support the
weight of the water (8.333 lbs/gal)...there are many boats with plastic
water and waste tanks.

Can they be made to fit?

If Ronco Plastics (see Wayne's reply) doesn't have a rotomolded tank
that'll fit, there are two custom plastic tank fabricators who can make
you one that does:

SeaFab Tanks in RI: http://www.seafabtanks.com/ (formerly C.C. Tech)

Triple M Plastics in ME: http://www.triplemplastics.net/

Does plastic hold
up?

Better than metal...a good quality plastic tank will outlast your boat.

Can they be made with baffles?

Rotomolded tanks cannot be...custom welded tanks can be.

The failed tank was made of
galvanized steel. Perhaps this is the route I should take?

Nope...I'd go with plastic...it doesn't corrode.
