Well, I've heard several stories that have indicated the same sort of thing.
My personal experience has been that the service has declined over the six
trips (about a 10 year timeframe). I have a friend who as a former exec in
the company, and he had the same complaint. At the time, I took it for a bit
of sour grapes, but since then I noticed the degradation in service.

OTOH, if you are reasonably experienced with keel boats you might look
into the second market. I use BVI yacht management. Some of their boats
are older Moorings boats but most are individual first owner boats. All
are in good condition and the price is a good 15% under Moorings.
Others you might look at are North/South, TMM and Horizon to name a few.

When you book your boat don't take the provisioning package. Way to
expensive and you end up with a lot of things you won't eat. Lay out your
menu and fill out the spreadsheet from Bobby's Market Place.

Leon, the manager, will reply with any questions or substitutions and
deliver it to your boat when and where you say. You will save about 40%
over having the charter company do it.
