It wouldn't do you much good unless you had either a variable pitch
prop or one that was mismatched to the engine and thus overloading it
most of the time. In the latter case, you would be steadily wrecking
your engine.
Unless the boat is light enough to keep going faster, putting more
power into the same prop beyond a certain point won't increase
performance. Sailboats don't fall into this category.
Many boats, especially sail boats, have props that are poorly matched
the engine and hull. If you don't think you have the performance that
you should for your horsepower, you might look into this.
