Basically, it's just a can of creamed corn, evaporated milk, say a half can, enough flour to make a batter the consistency of pancake batter, perhaps a tad thicker according to the way you like them. I personally like them as thin as pancakes. Then add oh, say an eighth of a teaspoon of baking powder (makes them rise nicely!). Salt and pepper. The evaporated milk is key. Whole milk just won't cut it! I like them best fried in bacon grease!! |
