....looking for a good calamari recipe. I have a pound of rings ready for

Jim - Next time you want to cook Calamari, you might try sautéing them
(naked, not breaded... and quickly so as not to overcook them) in a little butter and some beer. Squid, almost more so than other shellfish, will take on the flavor of whatever you cook them in. I use a "tart green apple" type beer for a lot of my seafood. Chose whatever beer or wine you enjoy most and try that. Plain old butter and fruit juices (like pineapple) are also good if you don't want to tolerate alcoholic beverages. An old Monterey CA tradition is to eat Calamari with your breakfast eggs and fried potatoes. One of my favorite meals!
