That's what's weird. Corned beef brisket *is* brisket. It's just been brined.
I've no idea why it's usually cheaper than fresh brisket.

It because the corned beef producer will buy it by the truck load
directly from the processor. If it goes through the retail channel it
gets treated like steak and they price it that way because they can.

Wouldn't that also be true of a brisket sold in Giant?

Probably not. It all depends on how Giant buys their brisket.

Well, they sell it as a packers cut, all wrapped up.

When Grobbel's buys it they get them in a huge crate unpackaged.

I would expect they're all that way at one point or another.

Just the fact that it is true makes it apparent the big corned beef
producers are getting a deal. I am not really seeing the differences
you are talking about tho unless it is a St Patty's day sale and they
are using the corned beef as a loss leader.
Typically it seems the corned beef and raw brisket price is similar,
certainly within a buck a pound depending on which is on sale that
week.
They do sell the corned beef really cheap around St Patty's day. I
usually get a couple and freeze them
That is like the 49 cent/lb turkeys on Thanksgiving. I bet that is
less than Giant's cost on a frozen turkey. They just want you to fill
your cart with things they are making money on. .
I have a 49 cent/lb turkey in my freezer as we speak. (from the
Christmas sale) I ate my last St Patty's day corned beef in the summer
last year.

I guess I like corned beef more than that. If I know there is one in
the freezer, it calls my name. I have been doing them in the big
pressure cooker lately. (cabbage, potatoes, old school) Never tried a
smoked one. I would think a raw brisket would be better for that with
a good rub. I have done that on my old electric smoker.

I cook the old fashioned corned beef like Fretwell in our instant
pot...corned beef, spices, cabbage, potatoes, carrots... First the
corned beef and then the veggies. Makes a nice, tender corned beef
dinner. With leftovers for a couple of days. The instant pot cuts the
beef cooking time way way down, to about an hour and a half.

Yeah, That is just a pressure cooker with a publicist ;-)
It does do a good job on the corned beef tho. You are right, you need
to time your vegetables so they don't turn to mush.

I did one corned beef on the smoker. Way too salty, never again. I only use fresh brisket on the smoker. When I do my first pastrami, I'll brine my own to control the salt content.

Smoked are great. I had four in the freezer from last St. P's day. Will stock up
again this year. Whole briskets are good, but a lot more trouble and cost. I did
the cabbage, potatoes, and carrots in the house. Use the same rub on the corned
beef as on the briskets.

Let it soak overnight in slow running water.
