I'm in Panama City, we had a string of 3 or 4 beautiful days. It's
overcast now, but very comfortable, looks like the rain may miss us today.

So far so good but we got a few short rains yesterday. But they were poundings. I don't think you could pour water out of a bucket that fast. More comming today too!

Is it typical that your neck of the woods gets a lot of flooding spring
and early summer? I'm thinking of taking my RV to the factory for a
service visit. Last year early June when we were there there was some
serious flooding going on.

Where's your factory? We're going out to Shipsewanna, IN, for the Open Range rally again this
year...sometime in July. Last year we got about twenty man-hours of free labor from the factory.
They fixed a lot of little, pesky crap, and also a couple big things that they found while fixing
the little stuff.

That's super, but what did you have for lunch or dinner?


I gave you my brunch and lunch up above! But, I also had Oatmeal with
a piece of fish for breakfast. Dinner was rice soup with duck, spiced
with hot peppers, fish sauce, green onions, cilantro, with a little
thinly sliced cabbage mixed in. Also had a ginger spiced dip made with
fish sauce, sugar, lemon juice, and garlic, to dip additional duck into.
The rice soup is one of my favorites.
But I could add another favorite, broken rice with marinated pork
chop pieces, with two over easy eggs on top with a mixed fish sauce recipe.
And then there's Pho, always good.
Oh, another favorite.
My wife makes something called Topopo salad.
In a large bowl, add cut or shredded lettuce (not to big), cubed
tomato, frozen peas, diced green onion, cubed boiled chicken. Sprinkle
in a generous portion of Parmesan cheese into the salad and mix well.
You can let this rest a bit while you get the chips prepared.
Layer your favorite Tortila chips on a plate, spread with heated
refried beans, cover with shredded cheese and place in oven to melt.
Then spread guacamole on top of the melted cheese.
Now heap your salad on top of the chips, bean, cheese, guacamole
plate. Cut and drag a portion onto your plate and eat.
You can add your favorite taco sauce, but I always have at least my
first plate without.


My wife would be mad if she knew I was giving out her recipe! :-)

Sounds great. We make something similar to the Topopo salad, but I grill the chicken, slice it, and
eat the whole mess on tortillas.

I won't tell your wife!
