Grilled Shrimp
 
So, the Mrs. and I at at the Lone Star Steak House last evening and we
ordered some of their grilled shrimp. I thought they were fantastic.

So I did some looking to find a copy cat recipe, and found a bunch of
stuff.

I just mix a little olive oil, cracked black pepper and old bay to
roll the shrimp in, then cook them fast on a real hot grill. You want
to burn a crust on them.
16-20 shrimp look better but 26-30s cook better. You want this to go
fast so they don't get tough.

I grill shrimp alot, good stuff! If you want some good grilled fish,
look for pre-marinated Cajun spiced catfish fillets. Around here, Publix
and Kroger has them. They grill up really nice!

That outback recipe looks pretty good. I may have to give that a shot. I've been thinking about out
some Shrimp Scampi. Haven't tried it yet. Waiting for a sale on shrimp at the local store.

fire. You want shrimp to just be to the point where the inside stops
being translucent and becomes solid white. It starts getting tough
after that.
My favorite is still butterflied beer battered and fried but it is not
as healthy. ;-)

fried shrimp, just not very many of them.

I hover around the deuce. If I step on that scale at Publix and I am
busting the deuce it is "step away from the doughnuts"
If I am a buck 96, it's fried chicken!

Fried chicken I don't do. Webers has a couple new marinades out. Cutting up some chicken breasts and
marinating them in the stuff for a day makes for some fine kabobs.

You can do a good job with a chicken if you have a back burner on the
grill and your rotisserie. Roll it in the rub of your choice (lemon
pepper, cajun or whatever). That ends up making a very low fat chicken
with lots of flavor.


Grreg, in the summer, we do a lot of grilled chicken. one of the
favorites of mine is to dip them before, and after in Italian
dressing, OR use something like lemmon/garlic or Lemon/pepper.... lite
or otherwise. haven't' had any complaints yet,.

I do a lot of rotisserie chicken with a no / low salt rub. Problem with
fried chicken is it always deep fried these days and not pan fried like I
grew up with. Roll in flour and a little bacon grease and fry the chicken,
turning a couple times. Then make a milk gravy with the leavings in the
pan.

Shrimp is almost always on sale at our local supermarkets, and is
available in three or four different sizes, usually. It's not that
expensive.

This recipe for shrimp and scallops, from the Bonefish Grill,
produces a fine meal.

There's no shortage of good places to buy seafood in the DC metro area.
Even Giant and Safeway have good fresh seafood, except on Mondays, of
course. There are also seafood markets. We have three or four in this
area alone, and we live in "the sticks."

Occasionally the local IGA will have Prawns. don't know if it's
seasonal or not. But they're always shell and all. Then Wal-Mart will
have their round shrimp factory dishes which aren't that appealing to
me.

in...I'd thought by now you could buy it just about anywhere.

You must have went to some pretty upscale Chinese eateries. I've never
been given spaghetti noodles in place of real lo mein. Of course, I

around here we have several Asian markets. Ranch 99 is probably the best.
And Shrimp is always less there than at the Safeway or other normal chain
markets. Also a better selection.

When I had the place in Treasure Island we used to get our own shrimp
when they were in but that is a seasonal thing. It is also not a cast
net thing. You use a flashlight and a dip net.
Those are still going to be 60 count shrimp, not the large shrimp that
are good to cook on the grill.



Different strokes. Up in NE Florida, we used cast nets, especially on
the St. Johns River near Doctors Lake.
