If not cooked properly, they are heavy and chewy. I don't like raw oysters, but I do like raw cherrystone clams. Unfortunately, hepatitis is a risk in eating raw shellfish. You do not want hepatitis. Jerry, the owner of Jerry's Place, has promised to get in some fresh Ipswich clams to make fried whole belly clams, one of my very favorite seafood dishes. It's not easy to find the dish south of New England. |
