Has anyone found a good source for identifying cordage from the tracer
colors? I have acquired a number of high tech single and double braid 100'
to 150' remnants that are not labeled. I think most are NER and Samson but
I can't find a good ID chart..

You could contact those too companies but I suspect that the
colour tracings vary with the season like fashion colours.

For a cruising boat, does it really matter (unless you're
trying to distinguish nylon from polyester)?

It easily could matter. There are often different splicing regimes and
techniques for various synthetics, even when they are all in general
intended for, for example, running rigging applications.
