Dave,
I run the sheet back to the two stern mooring cleats, thread the thru the center hole and tie a figure eight knot in the end. When it is the working sheet, I wrap it around the sheet winch and stuff the access in the sheet pocket. The lazy sheet is pretty well used up, considering it goes foreward outside all the stays, around the Lee side of the Gennaker to the Clew. (Each Sheet, on my boat is 40 foot) My rolled up furling Jenny sheet are remove from the winches and set in Jam Cleats and the excess is stored in the back half of the same pockets.
