Salmon - Brown Sugar Crusted
Dry Sugar Rub
2 tbs brown sugar
1 tbs chili powder
1 tsp black pepper
? tbs ground cumin
? tbs paprika
? tbs salt
? tsp dry mustard
Dash of cinnamon
4-6 Salmon filets.
2 tbs canola oil
? to 1/3 cup Dijon mustard.
Blend all dry ingredients for the rub. Generously coat one side of the filets with the rub.
Heat oil in heavy pan over medium-high heat. Place filets in pan, seasoned side down. Cook about 2
minutes to sear. Turn filets over. Reduce heat to medium and continue cooking 6-8 minutes, or until
fish is opaque throughout.
Serve with the Dijon mustard, if desired.
Try this in place of the straight Dijon:
Mustard sauce recipe
2 Tbls Dijon Mustard
2 Tbls Chineese Hot Mustard
1 tsp Paprika
1 small can Sweetened Condensed Milk
Cider vinegar to thin
