Default Finishing new wood

Well, varnish is sort of amber. Logically it would tend to turn what
it is applied to a bit yellowish. If you insist on a totally clear
finish you might look at a clear lacquer - cellulose not natural. It
probably isn't as good a protection for the wood but on the other hand
your canoe probably spends most of it's time under cover.
