Default What material to use

The splash strakes on my Tolman was made from UHMW plastic but

So, what material should I replace it with? These strakes are about
3/4" wide X 1/2" thick. I am thinking maybe 1/4" thick pine with
another 1/4" ply on top both saturated with epoxy. That way I can
replace the ply when it wears too much.

Well, depending on where you are I would look for Douglas Fir instead of
Hemlock or Pine. It's a bit harder, stronger, and holds screws better.
Then like you said, screw and goo a piece of plywood maybe 1/4 or 3/8 on
as a sacrificial protector. If you wanted more protection, goo a 1 1/4
inch strip of 6 oz fiberglass tape over the plywood...
