Default Oil level mysteriously changes on dipstick

The PWC newsgroup is almost non-existent so I hope I can discuss this
here.
I own two, four-stroke, 2006 Yamaha vx110 sport pwc waverunners. Before
I
started them up at the beginning of the season I checked the oil level
and
they both "appeared" to be two quarts low of engine oil. They were both
sitting perfectly level and had not been started since last season. This
startled me but I added two quarts to each one so it lined up right on
the
full line of the dipstick.

Then I ran them both and checked the oil afterwards and now they both
appear
to be two quarts overfilled, and I have to suck 4 quarts of nice clean
oil
out of them.

I just want someone to explain where the oil was hiding when I
first checked them??? Makes me think the best time to check the oil is a
minute or two after engine shutdown.

All excellent answers which explain my experience. I am new to PWC's and
it just didn't make sense. I am embarrassed to say I never even consulted
the manual... thinking in my head that "I know how to check oil." Thanks
