The easiest way to determine that is the old hand test - back of the
hand on the right and left side of the exhaust manifold. If one side
is cooler than the other, there's your problem.

I think you are on the right track - head gasket. It doesn't sound
typical, but based on the symptoms, that's what I'd guess - in
particular with all the other repairs.
