What's the best device to assist in changing the gear oil?

Get a lower unit oil pump. It screws on top of a quart jug and has a
hose that screws in the bottom plug hole. This is like the pump on a
bottle of hand soap. Then you just pump the oil in until it comes out
the top holes. That is a whole lot easier than trying to hold a bottle
up to the bottom hole, squeeze it, then get the top plugs in before it
comes "unsquoze". I always end up spilling as much as I squirt and you
never seem to be able to get more than 3/4 of it out of the bottle.
I use a real drain pan with a screw on cap (for draining) that is big
enough to catch all drips. They have them at any auto parts store.
Those stores will usually take back the used oil for recycling.

Thanks, I saw one of those pumps at West Marine, but didn't know if they'd
do the job or not. Might give one of those a shot.

I've been changing oil in other things for years, so the waste oil is not a
problem.
