3 to 5 degrees is about right; depending on wind strength. By the way,
that wing will scallop up wind damn well. Just keep the flow over the
wing. You'll be able to feel it in your helm. Don't PINCH but you can
borrow a degree or two with the scalloping and getting back to footing.
