I don't see why not. You'll have to experiment to find the optimal
sitting/kneeling position once the engine and drivetrain are removed.
For that matter, is there even a place where you would fit comfortably
in it? I haven't looked inside one to see what the shape is like.

I take it that this is a "freebee"? If it's going to cost you anything,
you'd be better off to buy a small, used kayak. There a thousands of
inexpensive recreational kayaks languishings in garages, sheds and
yards. They only sell for $300 new, so you can probably find one for
under $100 used, probably with a paddle and a PFD thrown in.
