I know this is an old thread, but in case you haven't found a timer to suit
your needs here is another idea:

There is a company called NASCO that sells everything from farm supplies to
art supplies, educational items and lab equipment. I have a timer I got
there called the "Triple Timer" that can keep a clock on one screen and have
two timers independent on separate screens. They can be interlocked or run
independent, count down or count up. They have more than one, but this URL
should take you to one of them, then you can look around for the one which
may suit you best.

you can achieve the same effect with a stopwatch - start it at a known
time - stop it when you take your sight and do the math to work out
the time you stopped it.
