Really? I might give that a shot. I assume the shells off of a hard
boiled egg are more sanitary but I am not sure they would impart the
right flavor.


No flavor. The eggshells will reduce the acidity making the coffee
smoother.

This is more than that. The coffee has a different flavor component
that I have never found anywhere else. Even the chef at my wife's
place wasn't sure how they did it. (at least not in any way I could
discern)
It is definitely in the process because our electrician buddy works at
the Ritz and he brought me some of the coffee. It was good but not
Ritz good. This is also not some espresso cup at a time thing since
they make huge pots of it.
