The transom is adjustable.

Granted, an outboard on the transom of a sailboat is a compromise at best.

Exactly, I wouldn't put myself in a situation where I "depended" on the
outboard... Except for maybe being becalmed.

so you don't end up with
a dead engine when you need it most

That's why I bought a new one.
