Like everything, it's all in the preparation. When I worked in New
Jersey we used to eat lunch at a Chinese buffet once or twice a week.
They had a specialty called tofu chicken which was really quite tasty.
It was thin sliced chicken in a gravy-like sauce with bits of tofu
added.

If the sauce and the chicken had some flavor, I could handle that. I wonder why the
tofu was added.
