Six of us from this area chartered a boat out of Key West last week

Yellow Tail Snapper, and some other fish. Here's a 20 pound grouper
caught by yours truly:

Very tasty.
What was the name of the charter company? I've used tortugasfishing.com
in the past with excellent results on 3-day trips but they book out a
year in advance - quickly. How were the seas?

I'd suggest checking out their boats in advance before making a
commitment. They are very basic and we were not entirely happy with
the one we were on. Prices are reasonable however and somewhat
negotiable.
Wind was out of the north at about 15 kts so we were getting some roll
in what I would describe as a medium chop. We spent most of our time
behind the reef, and at night were anchored in the lee of the
Marquesas Keys which made sleeping tolerable.
