Very good practice for fine control of a boat with a paddle, is open boat solo. It rubbed off very well on my kayaking. Don't forget a lot of the boat's directional stability will come from keeping the trim right, so experiment with moving back and forwards. If you just sit in the back seat you'll make life a lot harder for yourself...
