Steering for small boat.
 
16 foot workskiff. Low power, low speed 25 horse. I would like to
mount the wheel at thigh level horizontally and maneuver with my knee.
I asked a salesperson what the steering ratio was for the rotary
steering as compared to the rack, but he could not answer. I need to
know what steering system I can put in for the most steering range
from the least steering input, any ideas?

Stick steer.

In general, I believe that on mechanical systems, the full
port/starboard range is 2:1 - I think. Don't quote me on that.

Yup, I saw the same thing. I might just build a pulley system, not
like it's a go fast, besides, who would know. Think the guys down on
the river would pick up on that when they check me out? ;)
