Yeah - pretty neat, but can they cross the finish line upside down
sideways on fire?

I think not. :)

Do they refill the racetrack every once in a while? Seem like the boats
throw a lot of water off the course.

Upside down, sideways, rolling, and on fire, and full of water. But NASCAR
is better watching as there is more than one vehicle on the track at a time.

How can they be on fire if they are full of water?

Yes, and NASCAR does not race over a muddy field with 5 inches of
water in a ditch.

Any resemblance to real boating is purely coincidental.

If there is a form of auto racing more boring than NASCAR, I haven't
found it. I went to two races at Daytona when we lived in Florida, and
just couldn't get into them.

Just like those sinking ships in the WW2 movies. A little gas floating on
the water.
