That story broke down here in Florida 3~4 months ago. I don't recall exactly but of the establishments sampled you had about a 50~50 chance of getting the real McCoy. Kinda like the practice of punching out scallops from stingray wings. |

A long time practice. Less desirable species are often given a more appetizing name, but it seems unusual to use the name that specifically applies to another species of fish. Dogfish sharks are often sold as "rock salmon" or "flake", (commonly used for fish and chips in Britain). Obviously a dogfish shark is not any member of the salmon family. Sablefish are often marketed as "black cod," (but a sablefish is not a member of the cod family). |
