Sinking Robalo 2520
 
I have a 1993 Robalo 2520 (center console) that is floating lower in
the water. I can no longer drift fish in moderate seas because I will
ship water over the transom. New engines installed are within 10
pounds of the old ones so I am wondering if I have water logged the
foam flotation thereby causing the boat to ride lower in the water.
Any ideas on other possible causes or fixes?

The first thing I would do is haul the boat and see where the hell the
water is getting into it.

Your guess is probably correct. I had that happen on a 17' Boston
Whaler Montauk in the '80s. I whacked a rock at Barn Island Launch,
repaired the fiberglass and a month or so later noticed that the boat
felt heavy and I wasn't getting any speed - it also sat a little lower
in the water, etc. Sure as heck, I water logged foam.

You need to take a look at it right now because it will only get worse
and repairing it now will be cheaper than later.
