Holiday Kayaking – seeking advice

Hi

I'm going to Florida for two weeks in September, to the Gulf coast and
at the moment I'm planning things to do. I'm interested in having a go
a kayaking whilst i'm there, but I've only ever been in a Canoe ages
ago when I was a kid and so I'd be pretty much a complete beginner, as
would my partner (who I'm trying to convince it would be a worthwhile
experience - he thinks there are too many Aligators to be safe!).

What I'd like to know is if it would be advisable for us to book a few
hours instruction, or whether we could just join a guided tour and
pick it up along the way (there seem to be quite a few companies
offering this kind of thing).
I assume as beginners it wouldn't be advisable to just go it alone on
one of the mangrove trails. I'd be grateful if anyone could offer
advice on this or recommend any companies/trails for us to try.

Cheers

Vic
