If the dehydrator is very efficient and dries them to a crisp, more or
less, I'd estimate less than a pound. Does the dehydrator use a
vacuum to draw off the moisture?

A ripe banana is 75-80% water so they must be pretty wet.

That is where I got my number ;-)

I grow bananas in the yard. I know the whole plant is just a sponge.
The stalks are heavier than oak.

You betcha. I had to cut the stalk in 4 pieces to carry it to the curb.
By the way, I screwed up. I should have subtracted the weight of
the drying racks. My bad. I have extracted about 2 1/4 pounds of
moisture so far. I'll keep drying for a couple more hours. Based
on that I should have about 9.25 oz of chips and 3.6 lbs of
drying apparatus.

I watched the Kalee press conference on the Brockton Enterprise
web site. She came out of the gate running and it was a pleasure
watching her run. Did you notice the cameras never panned to the
press. Also the press was very respectful. I think they were
afraid of her.

So are the resulting slices soggy or crispy?

I've had store bought banana slices that were as light and crispy as
potato chips, but a little thicker. Good snack food.
