Oil level mysteriously changes on dipstick

The PWC newsgroup is almost non-existent so I hope I can discuss this
here.
I own two, four-stroke, 2006 Yamaha vx110 sport pwc waverunners. Before I
started them up at the beginning of the season I checked the oil level and
they both "appeared" to be two quarts low of engine oil. They were both
sitting perfectly level and had not been started since last season. This
startled me but I added two quarts to each one so it lined up right on the
full line of the dipstick.

Then I ran them both and checked the oil afterwards and now they both
appear
to be two quarts overfilled, and I have to suck 4 quarts of nice clean oil
out of them.

I just want someone to explain where the oil was hiding when I
first checked them??? Makes me think the best time to check the oil is a
minute or two after engine shutdown.

To close the loop on this one, the dealer, referring to the manual, says I
should have run the engines until they reached operating temperature, shut
them off, and then checked the oil level. Something about the sump and
sitting for 6 months off-season. I know now that its not like a car where
the oil level gets higher the longer it sits.

Well, I've been wrenching cars all my life, and never heard of that
dry sump stuff either, so don't feel lonely.
I bet I would have done the same thing - except I am prone to reading
the manuals.
