Default Recommendations on trip planning software & anchorages

I'm planning a long distance cruise this spring from the eastern
Caribbean over to the western side of Mexico and would appreciate any
recommendations for trip planning software, as well any anchorages along
the way.

Does anyone have a favorite tool for determining the best routes and
potential way points & anchorages. I'd like to be able to research as
much of this as possible in advance (on land) in order to estimate the
duration of our cruise, reasonable fuel usage, food requirements, etc.
