I strongly suspect the biggest difference is the lable. FWIW I
maintained racebikes for many years. We used Amsoil because rings &
pistons lasted 3-5x longer and bearings indefinately. Naturally YMMV.

If you use a good oil like Ams/Oil it won't make any
difference and you will get great performance to boot

They are not interchangable because outboard oil is

specifically
designed for engines that run MUCH cooler.

that....

I've never done any analysis of the difference(s).....but
surprise me.
