As a starting point, take the manufacturer's suggested winch for a given
sail, then double it.

You will be in the ball park.

I select my winches so that a 100 lb woman can handle the largest sail
with out the need for me to get out of my bunk and do it for her.

No one ever said my winches were TOO BIG.

I also found that getting "just the right size" was a mistake with no
100 lb cutiepie involved. After you live with a "just adequate" winch
for awhile, it soon becomes hardly worth the space it occupies in terms
of what it puts you through when you actually need it, and half the
time it is even slower & less useful than a good rope clutch. YMMV
