something's slipping
 
I have an 87 model 21' Searay 350 I/O and recently when I give it full
throttle, it's like something slips. The engine revs and the boat
starts to go, but then the boat drops and the engine revs even more. It
seems to operate OK at lower power if I don't push it.
Any ideas on what the problem could be?

Sounds like the prop hub is slipping. Take it off and look.
